My delicious Buddha bowl lunch. Tried this recipe for the first time for yesterday's lunch. There are garbanzo beans underneath that you can't see. Today I forgot to have with a cup of quinoa (I was out of my minute quinoa meaning you can microwave them for a minute the instant kind) so I had a small gluten free, dairy free dinner roll (Franz brand) that I recently discovered & were leftover from Thanksgiving. This recipe calls for a cup of brown rice (if not quinoa). So tasty with the sesame ginger salad dressing. 😊
